Saffron, renowned as one of the world’s most expensive spices, sees approximately 90% of its global supply originating from Iran.

Impact on Saffron Supply

The conflict has led to a blockade of the Strait of Hormuz, a vital shipping route, causing a significant dwindle in supplies. This scarcity extends not only to saffron but also to other essential staples like chickpeas and zereshk – a type of dried berry widely used in Iranian and Middle Eastern cuisine for flavouring.

Dilman Mahmoud, owner of the Persian restaurant Sadaf in west London, expressed his struggle to maintain customer prices despite the mounting pressures. His supplier, Moein Tiyari, highlighted the difficulty in purchasing saffron in bulk.

Mahmoud explained that prior to the Middle East conflict, he was acquiring saffron at around £1,200 per kilo. However, his supplier has now informed him that the cost has escalated to approximately £2,000 to £2,100 per kilo. “It’s quite a lot,” he stated, emphasizing the indispensability of the spice. “There is no substitute for Iranian saffron. We can’t get the same quality, 85% of our dishes require saffron… we use it in marinades for chicken breast and kebabs, and our saffron ice cream.”

Challenges for Suppliers

Moein Tayari, who operates Zoetic Ltd, a UK-based saffron supplier sourcing directly from Iranian farmers, confirmed the severe impact of the conflict. He noted that the absence of flights makes it challenging to export products from Iran, leading to prices that have almost doubled. Furthermore, the shutdown of internet services by Iranian authorities has crippled e-commerce operations.

Tayari explained the ideal conditions for saffron cultivation: “The region is perfect for planting saffron because one drop of rain can destroy saffron. So loads of sunlight, no rain, are perfect.” He added that while traders in England are desperately seeking bulk saffron due to their inability to connect with the Iranian market online, his company can only provide limited quantities, far less than what is needed.

The Geopolitical Context

The current Middle East conflict began in late February with strikes on Iran by the US and Israel. Tehran responded by striking neighbouring countries and closing the Strait of Hormuz. Mahmoud, facing the dilemma of increasing prices, stated, “I’m waiting for hopefully [when the war] is finished and we can keep the price as it is, so people can come out and enjoy the atmosphere of the Sadaf restaurant.”

Other Staples Affected

Saffron is not the sole ingredient impacted by the war. Mahmoud also sources chickpeas from Iran, reporting a price jump from £33 to £46 per box. Zereshk, a tart dried berry crucial for Persian rice dishes, has seen its price rise from £9.50 to £13 per kilo.

Stalled Peace Efforts

The fragile truce between the US and Iran has recently come under further strain. President Donald Trump dismissed Iran’s response to US proposals for ending the war and peace talks as “totally unacceptable.” According to Iran’s semi-official Tasnim news agency, Tehran’s proposal, mediated by Pakistan, called for an immediate end to fighting, a halt to the US naval blockade, guarantees of no further attacks, compensation for war damage, and the assertion of Iranian sovereignty over the Strait of Hormuz.

Iranian President Masoud Pezeshkian, on Sunday, did not directly address Tehran’s proposal but affirmed, “We will never bow our heads before the enemy, and if talk of dialogue or negotiation arises, it does not mean surrender or retreat.” President Trump subsequently rejected the plan via a post on Truth Social, reiterating his disapproval of Iran’s response.

#SaffronPrices #IranWar #StraitOfHormuz #MiddleEastConflict #GlobalSpiceMarket #SupplyChainDisruption #LondonBusinesses #EconomicImpact #FoodPrices #Geopolitics

London businesses are reporting a sharp increase in the cost of saffron, directly attributed to the ongoing conflict in Iran.
